Just One Month

Can’t believe that 2011 is this close to ending! Where did the time go? I am still in February!

((sigh))

Time flies.

Won’t be long until my kitchen will smell like homemade yummies!! Our “kitten”-almost grown cat- Matthew (we so lovingly call Toot!) will be playing in the Christmas tree before we know it. Thank God I finished my shopping back in January!! I know…. I know…. over achiever!

Sugarplums Dancing

Do you have a vision of sugarplums? Maybe after you make your own!!

Sugarplums

Ingredients

1 cup toasted pecan halves
1/2 cup pitted dates
1/2 cup Calimyrna figs
1/2 cup pitted dried plums (prunes)
1/2 cup dried cherries
1/2 cup golden raisins
1/2 cup unsweetened grated coconut
1/4 cup rum, orange liqueur or orange juice

Instructions

You must end up with all the nuts and fruits the same small size. It will be easier to use a food processor fitted with a metal blade. The mixture should be evenly and finely ground.
Place fruit and nut mixture, coconut and liquid of choice in a medium sized bowl. Mix together by hand until combined; the mixture should hold together when compressed. If it is dry, add a little more liquid.
Roll mixture into 1 inch balls, compressing the mixture so it sticks. Place toppings of choice in small bowl and roll sugarplums, coating completely.

Cream Cheese Mints

These are so simple to make! Make these for your next Christmas party!

Cream Cheese Mints

Ingredients

1 cup granulated sugar
3 oz cream cheese at room temperature
1 teaspoon mint extract
green paste food coloring
3 cups powdered sugar

Instructions

Line a cookie sheet with wax paper. Set aside.
Pour the granulated sugar into a small bowl and set aside.
In another small bowl, combine the cream cheese, flavoring, and paste food coloring.
Gradually add the powdered sugar and continue to stir, until well blended.
As mixture thickens, start to knead with your hands. Form into 1 inch balls and roll in granulated sugar.
Place on prepared cookie sheet and flatten with a fork.
Refrigerate until ready to serve. Store in the refrigerator.

Over the past two years, I have given my family a Christmas challenge. The first year, we made all of our gifts. Everything was handmade and of course, it was the year I explained that the kids were receiving 3 gifts from our family unit (1 from Santa, 1 from mom and dad, and one from each other). We loved it!
